Start by setting the oven to 225°C. Then roll out the gluten-free puff pastry and press it into a 24-cm pie dish. Prick the pastry lightly with a fork and prebake in the oven for 10 minutes.
Lower the oven temperature to 200°C. Distribute the cheese evenly in the pie case. Then take a bowl and whisk together the eggs, cream, milk, salt, and cayenne pepper. Pour the mixture over the cheese and bake for around 25 to 30 minutes. Let the gluten-free quiche cool slightly before serving.
