Cake Pops are lovely little round cakes on a stick. Essentially, they’re like a lollipop. And a chocolate cake. And a dessert. All the good things in life rolled into one, really! Our recipe for gluten-free Cake Pops uses Fria’s brownie as a base.
Makes around 20 cake pops
40 minutes
Mix Fria’s gluten-free brownie with the salt and cream cheese in a food processor. Add the cream cheese gradually until you get a malleable consistency. Roll the gluten-free mixture into balls. Put the balls on a plate and place in the freezer for 30 to 40 minutes.
Melt the chocolate in a bain marie or in the microwave. Dip the tip of a barbecue skewer into the chocolate, and stick into a ball. Allow the chocolate to harden so that the skewer sticks in the ball. Repeat with all the balls.
Then dip the balls in the chocolate and allow any excess chocolate to drip off. Decorate with sprinkles before the chocolate has set. Place the cake pops on a plate, or push them into a floral foam block and allow them to set.
