Cake Pops are lovely little round cakes on a stick. Essentially, they’re like a lollipop. And a chocolate cake. And a dessert. All the good things in life rolled into one, really! Our recipe for gluten-free Cake Pops uses Fria’s brownie as a base.

Makes around 20 cake pops

40 minutes

Ingredients

  • 1 Fria brownie
  • 1-2 tbsp cream cheese
  • pinch of sea salt
  • 300 g chocolate
  • sprinkles of your choice
  • 10 barbecue skewers or lollipop sticks

HOW TO MAKE IT

  • Mix Fria’s gluten-free brownie with the salt and cream cheese in a food processor. Add the cream cheese gradually until you get a malleable consistency. Roll the gluten-free mixture into balls. Put the balls on a plate and place in the freezer for 30 to 40 minutes.

  • Melt the chocolate in a bain marie or in the microwave. Dip the tip of a barbecue skewer into the chocolate, and stick into a ball. Allow the chocolate to harden so that the skewer sticks in the ball. Repeat with all the balls.

  • Then dip the balls in the chocolate and allow any excess chocolate to drip off. Decorate with sprinkles before the chocolate has set. Place the cake pops on a plate, or push them into a floral foam block and allow them to set.
