Caesar dressing:
Combine the egg yolks, anchovy fillets, freshly squeezed lemon juice, Dijon mustard and garlic using a hand blender or in a food processor. With the mixer still running, add the oil in a thin stream. Stir in the finely grated Parmesan cheese. If the mayonnaise becomes too thick, add a little water. Season with salt and freshly milled black pepper.
Croutons:
Cut the crusts off the bread. Cut the bread into small cubes. Rub the surface of a frying pan with half a garlic clove. Add the butter and fry the bread over a medium heat until it is a lovely golden colour. Sprinkle with the salt flakes. Toss the freshly cooked croutons in finely chopped herbs.
Coat the cos lettuce in the dressing. Top with the croutons, crispy bacon and Parmesan cheese shavings. Enjoy the salad on its own or serve as an accompaniment to salmon or fried chicken.
